Tortilla Soup

Considered Laotian comfort food, this recipe uses ground pork, but you can also use ground beef, turkey or chicken. It's also really good with a New York steak minced. The meat is marinated in lime juice and there's plenty of mint and cilantro. Laab is great with Basmati rice, served over bun noodles or even in pita bread.

This is a very simple recipe but the chips need to be watched constantly so they don't burn. You may choose to leave off the sea salt because the Kampot pepper is so flavorful.

Mexican Machaca

This shredded beef recipe from Mexico can be used in tacos, taco salad, burritos, or enchiladas. It's great with scrambled eggs as well. The beef is slow cooked with seasonings, including Adobo, then shredded and mixed with salsa. Adobo is a Mexican seasoning made from garlic, salt and cumin.
