Vegetarian Kampot Chili

Ingredients

  • 2 onions, chopped
  • 3 garlic cloves, minced
  • 2 bell peppers, chopped
  • 1 16-oz can kidney beans
  • 1 16-oz can pinto or white beans
  • 1 16-oz can chopped tomatoes
  • 1 8-oz can tomato sauce
  • 1-3 teaspoons chili powder
  • 1 teaspoon ground Kampot pepper
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon olive oil

Directions

  1. Cook onions, garlic and bell pepper in olive oil until soft.

  2. Add remaining ingredients and simmer for 30 minutes.

  3. Spoon into bowls and garnish with cheese or avocado.
