Sausage Chili with Kampot Pepper
Ingredients
- 1 Tbl oil
- 1 pound spicy sausage
- 3/4 pound lean ground beef
- 1 Tbl minced garlic
- 1 onion chopped
- 2-15 oz cans kidney beans
- 12 oz can tomato paste
- 14 oz can chicken broth
- 14 oz can beef broth
- 28 oz can diced tomatoes
- 2 Tbl cracked Kampot pepper
- 3 Tbl chili powder
- 2 tsp ground cumin
- 1 tsp dried oreagno
- 2 cups water
Directions
- Heat the oil. When hot, remove sausage from casing and crumble into pan. Add ground beef.
- Add garlic and onion. Mix and cook until meat is brown.
- Add remaining ingredients and simmer for one hour, stirring often to prevent sticking.
- Garnish with cheese, tomatoes or shredded lettuce.
