Sausage Chili with Kampot Pepper

Ingredients

  • 1 Tbl oil
  • 1 pound spicy sausage
  • 3/4 pound lean ground beef
  • 1 Tbl minced garlic
  • 1 onion chopped
  • 2-15 oz cans kidney beans
  • 12 oz can tomato paste
  • 14 oz can chicken broth
  • 14 oz can beef broth
  • 28 oz can diced tomatoes
  • 2 Tbl cracked Kampot pepper
  • 3 Tbl chili powder
  • 2 tsp ground cumin
  • 1 tsp dried oreagno
  • 2 cups water

Directions

  1. Heat the oil. When hot, remove sausage from casing and crumble into pan. Add ground beef.
  2. Add garlic and onion. Mix and cook until meat is brown.
  3. Add remaining ingredients and simmer for one hour, stirring often to prevent sticking.
  4. Garnish with cheese, tomatoes or shredded lettuce.
