Gazpacho: Kampot Style

Ingredients

  • Stale baguette
  • 1 clove of garlic, peeled
  • 1 cucumber
  • 1 red bell pepper
  • 3 large tomatoes
  • 1/3 cup olive oil
  • 1-2 teaspoons cracked Kampot pepper
  • 2 teaspoon red wine vinegar
  • 1/2 teaspoon sea salt

Directions

  1. Remove crust from baguette and cut into 4-5 inch squared pieces.

  2. Core, seed and roughly chop the cucumber, bell pepper, and tomato.

  3. Place all ingredients in blender and process until smooth.

  4. Chill. Serve in a glass. Garnish with celery. Makes two to four glasses.
