Cut chicken, onion and bell peppers into bite-size pieces.
Marinate the chicken in 1 tablespoon of soy sauce and 1 teaspoon of cracked Kampot pepper for 10 minutes.
Heat wok or large skillet and add cooking oil. When oil is hot, add chicken and stir-fry until almost done.
Add onion and stir-fry for 1 minute. Then add bell pepper and 1 teaspoon of cracked Kampot pepper and stir-fry for 1 additional minute.
Add soy sauce, sugar, Maggi and continue to stir-fry until onions are caramelized.
Serve with white rice.
